30 MINUTE CHOP AND DROP MEAL: CHICKEN VEGGIE SOUP

It’s so cold outside this morning. I was all snug under my covers and getting up didn’t sound like the best idea. But, I have writing to do, church, and plus I was hungry. I looked in the fridge and saw the remains of a rotisserie chicken I bought, some leeks, and carrots and decided to make a super quick Chicken veggie soup to warm up my soul. Basically I threw the entire carcass, leeks, onions, carrots, jalapenos (because I like it hot), lots of dill, poultry seasoning, a dash of sesame oil, garlic powder, cumin, and cilantro into a pot.

I took a shower and got dressed while everything cooked together. 30 minutes later I took the bones of the chicken out of my pot and VOILA! A fast and delicious way to start my day! YUM!
