Three weeks ago I saw artichokes at TJs and it made my heart leap! It meant spring was officially here…well somewhere. New York has been cold, disgusting, and miserable…my East coast friends are like “yep this is spring in New York”. I’m like where is the sunshine? Where are the flowers? How is this awful weather any different then the past few months we’ve endured except for the lack of snow every day. Well that is it…it’s raining instead of snowing everyday. I found this prospect very disheartening. SO when I saw the artichokes it made me think of California. And yes, it might be raining in the bay area or central cali but damn it there would at least be some sunshine sprinkled in there.

Seriously, what in the hell is the big deal about Kale!

“Everybody keeps telling me to eat Kale. Seriously, what in the hell is the big deal about Kale! ”

I was talking to a group of writer friends last night and the subject of Kale came up randomly. Well, not so randomly actually. Someone asked what I was up to and I mentioned fingerlickinkitchen of course. Which another friend so lovingly described as: the place where I make “cookies out of water”. Not really what I do but, hilarious none the less. The conversation some how meandered to Kale to which the statement above was made. I love these sorts of conversations! It is fodder for me to write about but, also a concrete way I can help others in this maddening quest to breakdown the mystery around food! So yeah, what the hell’s the big deal about Kale? FOOD OF THE DAY: ARTICHOKES

I must admit, for years I was perplexed by artichokes. Every time I saw them in the grocery store, with their hard looking exterior, I couldn’t even imagine eating one. I had so many questions… How do you cook it? What’s with the spike looking things on the outside? What does it taste like? How do you eat it? What can’t you eat? I didn’t want to be like that guy (you may have read about in the news recently) who ate the entire thing (hard parts and all) and got sick.

Episode 3: OMD Salmon Croquettes

When I was a little girl I remember sitting in the kitchen listening to music with my mom as we made dinner. She worked lord only knows how many jobs, so long elaborate meals weren’t generally on the menu. Her recipes where usually things you could chop and drop into a pot/oven/broiler to cook on their own or quickly fry. Now, Salmon Croquettes were one of my absolute favorite dishes. She never made them that often as my siblings claimed they didn’t like Salmon (side eye). Nothing overly fancy, just simple ingredients blended and fried into crispy delicious little fritters.

Episode 2: SUPER BOWL CHICKEN!

So we made it through the hectic holiday season of tempting delights. Then, for New Year’s made a vow to eat better, be healthier and happier this year, and then what happens? The play offs and Super Bowl to knock us off the healthy eating band wagon. But, don’t fear! I have two kick off worthy chicken dishes without all the grease or guilt. Fast, nutritious and delicious. No one will even notice they’re healthy.

Although I stopped working on the original post what stuck out to me was this portion regarding the items amino acid profile. I was shocked to see how many amino acids it contained.
