Episode 8: Mini Chocolate Candy Bites

Pin It When we think about cleaning up our diets the first thing to go is generally dessert. WHY? Because dessert equals empty calories, excess sugar, and excess fat right? Wrong. Desserts can also be tasty and creamy as well as nutritious, also sweet without being just empty calories. How pray tell do I do […]

EPISODE 6: YAKI SOBA MAKE OVER

The first time I had Yaki Soba, I was in London at a place called Wagamama’s.  It wasn’t overly greasy but, it had enough carbs to send me into a food coma and plenty salt to boot. Which in a nutshell explains my Chinese fast food dilemma: It’s usually either super greasy, heavy on the carbs, dripping in MSG and oozing salt. All these things are huge issues when trying to eat healthier. But, am I really going to give up my cravings for Asian fast food: Not on your life. So, instead of giving it up as my nutritionist had hoped, I gave it a make over.  Continue reading

EPISODE 4: CREAMY ARTICHOKE & LEEK SOUP

Three weeks ago I saw artichokes at TJs and it made my heart leap! It meant spring was officially here…well somewhere. New York has been cold, disgusting, and miserable…my East coast friends are like “yep this is spring in New York”. I’m like where is the sunshine? Where are the flowers? How is this awful weather any different then the past few months we’ve endured except for the lack of snow every day. Well that is it…it’s raining instead of snowing everyday. I found this prospect very disheartening. SO when I saw the artichokes it made me think of California. And yes, it might be raining in the bay area or central cali but damn it there would at least be some sunshine sprinkled in there.

Episode 3: OMD Salmon Croquettes

When I was a little girl I remember sitting in the kitchen listening to music with my mom as we made dinner. She worked lord only knows how many jobs, so long elaborate meals weren’t generally on the menu. Her recipes where usually things you could chop and drop into a pot/oven/broiler to cook on their own or quickly fry. Now, Salmon Croquettes were one of my absolute favorite dishes. She never made them that often as my siblings claimed they didn’t like Salmon (side eye). Nothing overly fancy, just simple ingredients blended and fried into crispy delicious little fritters.

EPISODE 1: SESAME OATMEAL BRITTLE

The holiday season is filled with sugary delights to tempt even the most steadfast health nuts I know. If they can’t make it through this unscathed what hope is there for the rest of us? Peanut brittle, cakes, pies, macaroons, or my mother’s famous southern pecan pralines. Dangerous treats waiting around every corner to ensare us in their web. Is this a hopeless battle? Nope… not at all.

Pin ItToday is a rainy New York day. The sky is grey and yet I am gloriously happy. However, that is NOT the way my morning started out at all. I still have the sniffles from this cold I’ve been fighting off all week. I tossed and turned all night worried about a myriad of […]
